Château Canon La Gaffelière

France

Château Canon La Gaffelière is a Saint-Émilion estate in Bordeaux owned by the von Neipperg family since 1971 and managed by Stephan von Neipperg, whose family has deep historical roots in viticulture. The estate is certified organic since 2014, with farming centered on composting, low-nitrogen amendments, restricted yields, hedgerow management and some biodynamic practices to protect ecosystem balance. In the cellar, the approach is precise and terroir-focused, with hand harvesting, gravity-fed fruit handling, parcel-based vinification in wooden vats, moderate-temperature fermentations, long maceration and élevage on lees in barrel before final blending. The wines are made under Stephan von Neipperg with support from Stéphane Derenoncourt, with an emphasis on complexity, elegance and clear expression of terroir.
