Castro Candaz is a boutique Ribeira Sacra winery in Galicia, founded as a joint project by winemakers Raúl Pérez and Rodrigo Méndez. Its vineyards lie in Chantada, in the Sil River area, where certified-organic, 45–80-year-old vines grow in soils richer in granite than slate. Working from a bodega provided rent-free by the property owner, the partnership follows a small-scale, minimal-intervention approach: whole-cluster fermentation, 30-day maceration, and maturation in a 1,500-litre foudre and French oak barrels.
