Les Horées

France

Les Horées is a family-owned boutique domaine in Burgundy, founded in 2019 by German winemaker Catharina Sadde and her French husband, Guilhem. The couple farms vineyards in Volnay, Beaune, Pommard and Puligny biodynamically, using year-round preparations, Guyot-Poussard pruning, cover crops and extensive biodiversity plantings, with minimal ploughing and manual harvesting. The domaine also works with grapes from closely connected growers. Catharina is the sole winemaker, producing limited, low-intervention wines fermented with natural yeasts, low sulphur and aged in French oak. The wines emphasize terroir expression, sustainability and biodiversity, with cellar operations based in Beaune since 2021.
