Grand Enclos du Château de Cérons

France

Grand Enclos du Château de Cérons is a Bordeaux estate owned since 2000 by Italian entrepreneur Giorgio Cavanna, formerly co-owner of Castello di Ama. Its vineyards lie within the original walled estate and on the Podensac plateau. The property follows a strongly sustainability-focused approach, with HVE 3 and ISO 14001 certifications, cover crops, and an agro-environmental management system; it moved to full organic status in September 2024. Winemaking is carried out by a dedicated team including Xavier Dauba, Bertrand and Patrick Léon, lead winemaker Xavier Perromat, and consulting oenologist Julien Belle.
