Domaine des Genèves

Domaine des Genèves is a family-owned, proprietor-grower estate in Fleys, at the heart of Burgundy’s Chablis vineyard. Founded in 1973, it is now run by Stéphane Aufrere, who continues the family’s viticultural tradition. The domaine farms Chardonnay on marl and fossilised Kimmeridgian limestone across several communes and Chablis appellations, including three Premier Crus. Sustainable, reasoned farming is reflected in its HVE Level 3 certification, held since the 2020 vintage. All grapes are estate-grown, with vineyard work, winemaking, ageing and bottling carried out on site. Stéphane combines traditional Burgundian methods with modern techniques, including pneumatic pressing, temperature-controlled stainless-steel fermentation and malolactic fermentation, aiming to express the character of each plot.
