Domaine Thivolle

France

Founded by Xavier Thivolle in 2019, Domaine Thivolle is a Beaujolais estate based at the top of the Chiroubles appellation. Its vineyards in Chiroubles and Morgon are in conversion to organic farming, with a focus on respecting the vine, its natural cycle and the character of each terroir. The estate works steep, granite-based sites planted with mature and old Gamay vines, including the Le Fâtre, Les Charmes and Corcelettes climates. In the vineyard, interventions are limited and treatments are applied only when necessary, with plant infusions and ground cover used to reduce environmental impact. Winemaking follows the traditional Beaujolais semi-carbonic method, aiming to preserve the potential of the grapes with minimal manipulation. Concrete, stainless-steel, amphorae and older oak are used for vinification and élevage, producing expressive wines that reflect their individual sites.
