Bodegas Pisuerga is one of Rueda’s oldest wineries, producing classically styled Verdejo from organically certified vineyards in La Seca, Castilla y León. The vineyards lie on a flat, high plateau at 600–700 metres, with poor, well-drained, limestone-rich soils and sandy patches. Vines are trained using both traditional goblet and modern trellis systems. Sustainability is central, with cover crops, organic manure, bio-organic fertilisers, biostimulants and hands-off vineyard management. Night harvesting, vegan-friendly vinification, stainless-steel fermentation and at least three months of lees stirring shape the wines. Oenologists and winemakers work closely together in the state-of-the-art winery.
