Family-owned Weingut Eymann farms biodynamically in the Pfalz’s Mittelhaardt, with organic viticulture since 1982 and Demeter certification since 2006. Led by Vincent Eymann since 2015, the estate focuses on Riesling and Spätburgunder from sites around Gönnheim, Bad Dürkheim, and Wachenheim. Its varied soils include calcareous loess and Buntsandstein, supporting site-specific wines that emphasize terroir and old vines. Low yields, hand harvesting, spontaneous fermentation, natural stabilization, and extended aging in wood or on lees define the craft-led approach. Alongside still wines, the estate produces traditional-method sparkling wines, with some spending up to seven years on the lees.
