Pheasant's Tears

Georgia

Pheasant’s Tears is a Georgian producer based in Kakheti, founded in 2007 by John Wurdeman and Gela Patalishvili, who continue to own and run the winery. Working with vineyards in Kakheti, Adjara, and Samtskhe-Javakheti, they focus on reviving native Georgian grape varieties. Farming is described as certified organic, with hand-harvested fruit and no synthetic inputs mentioned in the notes. The winemaking is firmly traditional and minimal-intervention: native yeast fermentations, aging in qvevri, no oak, and generally no fining or filtration, with low or no added sulfites. Their approach is closely tied to Georgian heritage, combining historical qvevri methods with a clear commitment to authentic, place-driven wines.
