Domaine Paul Nicolle is a family-owned and operated estate in Chablis, founded by Paul Nicolle in the 1950s and now run by his grandson Charly Nicolle and Charly’s wife, Lucie Thieblemont. The domaine farms Kimmeridgian limestone and clay-limestone soils across south-facing parcels in Chablis, Fleys, Chichée and Béru, producing wines from six appellations, including Petit Chablis, Chablis Grand Cru and Crémant de Bourgogne. It uses integrated farming methods and holds High Environmental Value (HVE) certification, while pursuing organic certification. Charly leads the winemaking, and Lucie oversees Crémant production.
