Girard-Bonnet

France

Champagne Girard-Bonnet is a family-owned grower in the Côte des Blancs, created by Paul Girard through the union of his parents’ Girard and Bonnet vineyards, with roots as winegrowers dating back to the 1900s. Based on Chardonnay sites in Grand Cru Oger and Le Mesnil-sur-Oger and Premier Cru Vertus, the estate is run by Paul as owner and winemaker. Farming is certified organic and Demeter biodynamic, with herbicides abandoned from the 2000s and practices including green manures, herbal teas, essential oils and eco-grazing to support biodiversity. In the cellar, parcels are pressed separately, fermented in wood, stainless steel and amphorae, aged on lees, and bottled without fining or filtration.
