Domaine Delsol is based in Montagnac along the Thau Lagoon in France’s Languedoc region, within the Picpoul de Pinet AOC. Its vineyards benefit from cool nights, Mediterranean breezes and high humidity—conditions well suited to the indigenous Picpoul grape. The estate produces wines exclusively from 100% Picpoul, using cold settling, fermentation at 57°C and two months of lees aging. The resulting style emphasizes freshness, lightness and aromatic character. An elephant serves as the winery’s mascot, recalling the historic passage of Hannibal and his elephants through the area.
