Producer

Domaine Daniel‑Etienne Defaix

France

Daniel Etienne Defaix is a twelfth-generation, family-owned Chablis estate in Burgundy, continuously operated since 1610. Led by Daniel-Etienne Defaix with his son Paul-Etienne involved in the cellar, the domaine focuses on Chardonnay from Chablis, Premier Cru, and Grand Cru sites. Farming is self-declared organic, with attention to old-vine health. In the cellar, the approach is low-intervention: indigenous yeast fermentations, no added sulfur, minimal oak, extended lees aging in stainless steel, and natural filtration. The result is a traditional, family-driven Chablis producer with a clear emphasis on restrained, minimally handled winemaking.
