Domaine Bernard Defaix is a fourth-generation family estate in Chablis, Burgundy, now run by brothers Didier and Sylvain Defaix, with Hélène Defaix overseeing administration and commercial affairs. Founded by Bernard Defaix in 1959, the domaine farms Chablis, Petit Chablis and premier cru sites, with a strong focus on sustainable viticulture. The vineyards have been Ecocert-certified organic since 2009 and the winery since 2012, with biodynamic-inspired practices, ploughing, compost, controlled cover crops, and limited use of sulfur and copper. In the cellar, the approach is low-intervention: gentle machine harvesting, natural yeasts, fermentation in stainless steel or oak, ageing on fine lees, and no fining. The wines are made to express terroir with precision, purity and Chablis minerality.
