Producer

Dolores Cabrera

Spain

Dolores Cabrera is the founder, owner, and winemaker behind La Araucaria in Tenerife’s Valle de la Orotava, Canary Islands. A longtime farmer, she began bottling her own wines in 2013 after years of selling grapes, working with her own centenarian, own-rooted vines at Hacienda Perdida and Montijo. The vineyards are trained in the traditional cordón trenzado system on volcanic soils and are farmed organically, with part of the parcels certified organic. Her wines focus on indigenous Listán Negro and are made with a low-intervention approach, including hand harvesting, native yeast fermentations, unfined and unfiltered bottling, and minimal sulfur. She also promotes organic practices among neighboring growers.
