Domaine Paul Pillot

France

Domaine Paul Pillot is a fourth-generation family estate in Burgundy’s Côte de Beaune, founded in 1900 and run by Paul Pillot with his children Thierry and Chrystelle. Based around Chassagne-Montrachet and neighboring villages, the domaine farms herbicide-free vineyards with organic-style, sustainable practices, including manual harvest and high-density planting, though it is not formally certified. Thierry Pillot leads the winemaking, with Jean-Marc Pillot also noted in some accounts, in a restrained, non-interventionist style with limited new oak. The estate’s holdings include noted premier cru parcels and a small plot in Bienvenues-Bâtard-Montrachet.
