Celler Pasanau

Celler Pasanau is a small, family-run winery in northern Priorat, owned by the Pasanau family and led by Jordi Pasanau. Established in Poboleda since 1850, the family now farms vineyards at the foot of Montsant, spanning seven sites, varied soils and a 500-metre elevation range. The vineyards are cultivated organically and regeneratively, with permanent cover crops, soil-regeneration practices, biodiversity enhancement, mechanical weed control and organic treatments; the oldest vines are worked traditionally with mules. Manual harvesting and meticulous vineyard work continue in the cellar, where Sandra Doix oversees minimal-intervention winemaking. French oak is used selectively to complement the wines’ power and minerality without obscuring their Priorat character.
