Bodegas del Palacio de Fefiñanes is a historic producer in Cambados, Rías Baixas, founded in 1904 and operating from a 17th-century palace. Owned by Juan Gil de Araújo Careaga and made by winemaker Cristina Mantilla, the winery works with long-term grower contracts in the Val do Salnés subzone. Its viticulture emphasizes traditional granite-post parrales training to improve airflow and sun exposure, and recent bottlings are certified Organic and Biodynamic. In the cellar, the wines are shaped through cold maceration, partial malolactic fermentation, extended lees aging with bâtonnage, and occasional fermentation in oak or acacia barrels.
