Domaine Nøvice

France

Domaine Nøvice is a young family-run estate in Poligny, Jura, founded in 2019 by Yves Roy-Salomon with his partner Christelle. Yves oversees both the vineyards and cellar, working as the sole winemaker. The domaine farms organic-certified vineyards, with some parcels managed biodynamically, using mechanical vineyard work, hand harvesting, cover crops, compost, and natural pest control. Its old-vine holdings include Savagnin and Poulsard, notably from Saint Savin and Trouillot Batard, on marl and limestone-rich soils. In the cellar, the approach is firmly low-intervention: natural yeasts, no additives, no added sulphur, and no fining or filtration. The wines focus on an unadorned, natural expression of Jura terroir.
