A Mano is a privately owned micro-winery in Puglia, run by winemaker Mark Shannon and Elvezia Sbalchiero. Working around four hectares of hand-harvested vines, the couple focuses on craftsmanship, freshness and sustainability while seeking to express a new, fresh style rooted in Apulian origins. The wines are self-certified as suitable for vegetarians and vegans, and low-temperature fermentation is used to preserve aromatics. Mark, originally from California, and Elvezia, from Friuli, met in Sicily in 1997 before discovering Puglia’s old Primitivo vines. Their tasting room is in the historic centre of Noci, near Alberobello.
