Saraja is a small Sardinian estate founded and run by five wine enthusiasts. Its vineyards lie at 300–500 metres on shallow soils ranging from clay to sand, and are farmed organically. Grapes are harvested by hand into small boxes, reflecting a careful focus on quality. In the cellar, wines undergo 14-day maceration, fermentation in stainless steel tanks and complete malolactic fermentation.
