Clos du Moulin aux Moines

France

Clos du Moulin aux Moines is a historic domaine in Auxey-Duresses, Burgundy, with monastic roots dating to 962 and a long link to the Abbey of Cîteaux. Owned by the Rollin family, the estate has been revived since 2008 under Willy Roulendes, with Michael Schwab and Anne also named in the team. The vineyards are farmed organically and biodynamically, certified by Ecocert and Demeter, with horse-driven tillage, soil work, winter cover crops, biodynamic preparations, and no chemical inputs. In the cellar, the approach is minimal-intervention: hand harvesting, indigenous yeasts, slow fermentations, low sulfites, and wines that are often unfined and unfiltered, all with a clear focus on soil vitality and terroir expression.
