Château Bellevue-Mondotte is a Saint-Émilion estate in Bordeaux owned by Vignobles Perse, led by Gérard Perse, since 2001. The vineyard is farmed with sustainable practices including green harvesting and leaf-thinning, though no formal certification is noted. Winemaking is distinctly artisanal: grapes are hand-picked and sorted, fermented with indigenous yeasts in temperature-controlled wooden vats, then undergo malolactic fermentation in barrel. The wine is aged for about 24 months, including time on lees in new oak, and is bottled without fining or filtration, giving the estate a precise, hands-on style.
