Caiaffa Vini Biologici is a family producer in Cerignola, on the heights surrounding Puglia’s Tavoliere, where limestone-rich soils, a mild climate and proximity to the sea shape the vineyards. The Caiaffa family practices synergistic organic agriculture, banning insecticides, pesticides and conventional chemical products while allowing spontaneous flora and fauna to support a balanced ecosystem. In the cellar, their approach combines tradition with modern technology, using native yeasts, long macerations and minimal sulfur alongside low-temperature maceration, vacuum pressing and nitrogen protection. They view wine as a living expression of grape variety, soil and human intervention, with nature at the centre of their work.
