Domaine Nicolas is a family grower in Nolay, in Burgundy’s Côte de Beaune, with six generations of winegrowing behind it. The estate is owned and run by Thierry Michon, who also makes the wines. Notes describe a hands-on, low-intervention approach in the vineyard and cellar, including hand harvesting and natural yeast fermentations. Farming is cited as biodynamic, with DEMETER and BIODYVIN certification, and also as reasoned viticulture without insecticides, anti-rot treatments, or herbicides. The domaine works mainly with Pinot Noir, alongside Chardonnay and Aligoté, across appellations including Hautes-Côtes de Beaune, Santenay, Saint-Romain, and Pommard. It was selected to represent the Côte de Beaune in the 2024–25 Jeunes Talents competition.
