Domaine Jaeger-Defaix is a family-owned estate in Rully, in Burgundy’s Côte Chalonnaise, run by Hélène Jaeger-Defaix, an agronomist and oenologist, with her husband Didier Defaix. The domaine farms key Rully Premier Cru parcels on limestone and clay soils, with mature vines, and has been managed organically since 2009, with Ecocert certification from the 2012 vintage. Vineyard work includes ploughing and hand harvesting. In the cellar, Hélène and Didier aim to preserve terroir expression through gentle handling, fermentation and ageing in mostly used oak, lees ageing for the whites, careful élevage for the reds, and light filtration before bottling. The estate focuses on Chardonnay and Pinot Noir from Rully.
