Vinification & maturation
France
Domaine Bourgogne-Devaux is a fourth-generation, family-owned Burgundy estate in Meloisey, run by brothers Luc and Fabrice Bourgogne-Devaux. Founded in 1899, the domaine resumed estate winemaking in 2012 after a period of selling its production as grapes, reviving the family’s longstanding connection with wine. Its vineyards lie in Bourgogne Hautes-Côtes de Beaune and Pommard, with older vines farmed using organic practices where possible, low yields, careful soil and canopy work, and hand harvesting with vineyard sorting. Each cuvée is vinified to express terroir and vintage character, with on-site stainless-steel fermentation, pre-fermentation maceration, malolactic fermentation in spring, and 12–18 months of French-oak aging using limited new wood.
