Pinot Noir is central; Meunier is also used.

Usually dry, with fresh red fruit and a lighter texture. Some producers make more structured wines for ageing.

Still whites

White

Chardonnay is important, alongside other permitted Champagne varieties.

Dry and lively, often with citrus and orchard fruit. Oak and ageing choices vary by producer.

Still rosés

Rosé

Dark-skinned Champagne grapes, including Pinot Noir.

Dry and fresh, with delicate red-fruit flavours. These wines have no bubbles.

Where it grows: Scattered vineyards within the Champagne growing area in northeastern France. A village name such as Bouzy may also appear on the label.
