Chenin
Chenin’s full white-wine spectrum, from dry and sweet to sparkling.
Apple, citrus and quince with lively acidity and a textured, dry finish.
Ripe pear, quince and honeyed fruit, with sweetness balanced by Chenin’s fresh acidity.
Apple and citrus with fine bubbles; lees ageing can bring bready complexity.
Sec is dry, demi-sec has some sweetness, and moelleux is sweeter. Pétillant and mousseux indicate bubbles; the style on the label matters as much as the place.
