Domaine Theulot-Juillot

France

Domaine Theulot-Juillot is a family-owned estate in Mercurey, Burgundy, run by Nathalie and Jean-Claude Theulot, who inherited it from the Juillot family. Working vineyards exclusively within Mercurey, the domaine farms without herbicides, using ploughing, natural grass cover and yield control through debudding and green harvesting; it holds HVE3 certification and is pursuing organic conversion. The soils are chiefly beige marl and Bathonian limestone, with vineyards reaching more than 300 metres in altitude. Winemaking combines traditional Burgundian methods—including manual harvesting, sorting, pigeage and extended maceration—with restrained oak ageing to preserve freshness and fruit. The range includes Mercurey village and Premier Cru reds and whites, Bourgogne wines and Crémant de Bourgogne, with a focus on expressing individual terroirs while combining tradition and modernity.
