Besserat de Bellefon

France

Founded in 1843 in Aÿ and now based in Épernay, Besserat de Bellefon is a family-owned Champagne house led by President Nathalie Doucet, with Cédric Thiébault as Cellar Master. The maison is committed to organic and biodynamic farming in the Marne Valley, with Ecocert organic certification since 2015 and work toward Demeter, using cover crops, compost and no chemical inputs. Its style is defined by a low-pressure second fermentation method used since 1930, first developed for Cuvée des Moines, which creates notably finer, creamier bubbles. Across the range, malolactic fermentation is deliberately avoided to preserve freshness, aromatic finesse and ageing potential, with fruit sourced from a broad selection of mostly Premier and Grand Cru sites.
