Thymiopoulos Vineyards

Greece

Thymiopoulos is a family-owned estate in Naoussa, Northern Greece, led by Apostolos Thymiopoulos, who founded the winery in 2005 after first vinifying his family’s vineyards while studying oenology. Based in Trilofos and working with parcels in Fytia, the estate focuses on Xinomavro and on expressing the differences between Naoussa’s sites and soils. Farming is certified organic, with non-irrigated vines and selected biodynamic practices aimed at balance and biodiversity. In the cellar, Apostolos follows a minimal-intervention approach, using spontaneous fermentations, long macerations, and large oak to preserve purity and avoid overt oak influence. The wines are intended as authentic, terroir-driven expressions of Xinomavro.
