Founded in 1980 by farmer-sharecropper Henri Carrette, Domaine Carrette is a family-run estate in Pouilly-Fuissé, at the foot of the Roche de Vergisson in southern Burgundy. Today, Henri’s grandson Hervé manages the vineyards while his wife Natalie, a trained oenologist, oversees winemaking and élevage. The estate has pursued organic conversion since 2020, avoiding herbicides and chemical fertilizers, favoring natural fungicides, and working the vines manually. Grapes are harvested by parcel and fermented with indigenous yeasts, with methods adapted to each site and élevage lasting six to 24 months. The Pouilly-Fuissé wines reflect varied soils and microclimates, and are generally raised in Burgundy barrels, larger casks, and foudres.
