Perliss Estate Vineyards is a limited-production winery in Calistoga, California, founded after Dr. Herbert Perliss purchased thirteen acres of unimproved land in 1989 and planted vines in 2008. Its Ravens Vineyard is a 2.6-acre, organically farmed volcanic knoll, tended by hand by Piña Vineyard Management. Under winemaker Aaron Pott, the estate pursues non-interventionist winemaking and pure expressions of site, including unblended Cabernet Sauvignon, Petit Verdot, Sémillon, and other Bordeaux varieties. Wines are hand-harvested, fermented with indigenous yeast, and aged in handmade Tuscan terracotta amphorae and French oak before being bottled unfiltered and unfined. Hand-dipped beeswax closures and limited membership allocations reinforce the winery’s artisanal, small-release character.
