Domaine François Carillon

France

Family-owned in Puligny-Montrachet, Domaine François Carillon was created in 2010 after the split of the historic Carillon estate, continuing family roots in the village that trace back to the 16th century. François Carillon runs the domaine with his family and a small team, focusing on estate fruit from Puligny-Montrachet, Chassagne-Montrachet and Saint-Aubin. Farming is near-organic and biodynamic in approach, with no herbicides, integrated pest management, manual work in the vines, hand harvesting, composting of pruning wood, and chemical treatments only when necessary. In the cellar, the wines are made with a traditional Burgundian approach: fermentation and élevage in oak, extended lees aging, and careful protection from oxidation. The style aims for elegant, refined, terroir-driven Burgundy, centered on the purity of Chardonnay.
