Lilyale

Waris Hubert is a family-owned Champagne estate in Avize, Côte des Blancs, founded in the 1800s and now in its fourth or fifth generation. Run by Olivier Waris and his wife Stéphanie Hubert, with their children involved in farm management, the domaine manages about 18 ha of Grand Cru and Premier Cru vineyards. It practices organic and biodynamic viticulture, using horse-drawn ploughs and sheep grazing, and achieved organic certification for the 2023 vintage. Winemaking emphasizes low-temperature fermentations, minimal sulfur, extended lees aging, and minimal cellar intervention, with Olivier Waris as the lead winemaker.
