Cantine Polvanera is a family-owned winery in Puglia, owned and managed by Filippo Cassano, who serves as director, cellar master and oenologist. The estate’s vineyards lie at 300–450 metres on limestone-rich soils and focus on native varieties including Primitivo, Aleatico and Aglianico. Farming follows organic principles, with mechanical weed control, minimal chemical use and irrigation only when needed to rescue the vines; several wines carry EU organic certification. Winemaking combines stainless-steel fermentation with bottle ageing, generally avoiding wood, and some wines are made without added sulfites.
