Founded in 1815 in Chablis, Billaud-Simon has belonged to Domaine Faiveley since 2014, with Olivier Bailly directing the wines from the 2014–2015 transition onward. The estate is rooted in the historic heart of Chablis, farming Chardonnay across notable Grand Cru and Premier Cru sites on Kimmeridgian soils. Organic conversion began in 2022 and was completed with official organic certification in 2025, alongside practices such as avoiding chemical weed killers, ploughing, and close vine-by-vine monitoring. The domaine’s style centers on revealing terroir through crystalline, saline, airy Chablis marked by purity, freshness, concentration, minerality, and strong aging potential.
