Arrayán is a family-owned estate winery founded in 1999 by José María Entrecanales and María Marsans in Santa Cruz del Retamar, Toledo, between the Castilian dehesa and the Sierra de Gredos. After Entrecanales’s death in 2009, Marsans assumed control and continues to run the project. Working across La Verdosa, village vineyards around the Alberche, and high-altitude sites in Cebreros, Arrayán expresses mountain, dehesa, and village landscapes through indigenous and international varieties, with a growing emphasis on Garnacha and Albillo Real. Farming is environmentally sustainable, including organic cultivation at La Verdosa, without chemicals or synthetic products. Grapes are generally hand harvested and fermented spontaneously with native yeasts, followed by oak aging. The wines reflect a balance of tradition and avant-garde thinking, centered on the character of the landscape.
