Domaine Fernand & Laurent Pillot

France

Domaine Fernand & Laurent Pillot is a family-owned estate in Burgundy’s Côte de Beaune, with Pillot family roots dating back to 1625. Fernand and Laurent Pillot took over in 1992, and today Laurent works in the vineyards while his son Adrien, the sixth generation, leads winemaking. The domaine farms by hand with low yields and hand-sorted fruit, following agrobiological principles and a strong environmental focus. It has held Lutte Raisonnée certification since 1990, DEPHY Ecophyto since 2012, HVE Level 3 since 2021, and has moved to fully organic farming, with an AB organic label noted for 2024. The style emphasizes careful vineyard work and restrained cellar handling, including minimal oak and no fining or filtration.
