Hacienda La Parrilla

Spain

Hacienda La Parrilla is a family-owned estate in San José del Valle, Cádiz, in the Jerez region, run by the Rebuelta González brothers. Its Palomino vineyards are organically and vegan certified, with sustainable viticulture at the heart of the Terroirs Project, developed in partnership with Les Caves de Pyrène. Winemaking takes place in a restored 1881 olive mill and follows a natural, minimal-intervention approach: hand-harvesting, spontaneous fermentation, low-temperature stainless-steel vinification, no filtration or fining, and low sulfur. The result is a distinctly artisanal expression of the estate and its Palomino vineyards.
