Ayunta is a family-owned Etna estate in Randazzo, Sicily, founded in 2011 by Filippo Mangione, who is also the winemaker. Working old vines on Etna’s northern and northeastern slopes in volcanic soils, the estate farms organically with hand-worked vineyards, no chemicals, and even sheep for weed control. The approach is low-intervention and additive-free, with spontaneous fermentations and artisanal élevage in concrete, stainless steel, neutral barrels, and cement vats. Focused on expressing Etna’s terroir, Ayunta’s wines are shaped around elegance and balance.
