Domaine Jacques Carillon is a small, family-owned estate in Puligny-Montrachet, Burgundy, run by Jacques Carillon and his family. The domaine follows near-organic viticulture, avoiding herbicides and working the soils by plow and hand. Short pruning, severe debudding, green harvesting, and manual picking reflect a careful approach in the vineyards. Grapes are pneumatically pressed, then fermented and aged in barrels for several months. With a modest range of five wines, the estate offers a focused expression of its Puligny-Montrachet origins.
