Eredi Canonica Cav. Cesare is a family-run Langhe estate in Torre Bormida, Alta Langa, founded in the 1930s and now led by Cesare Canonica, with Giovanni Canonica also involved in winemaking. Its vineyards occupy steep, characteristic Langa terraces on calcareous soils with sandstone. Farming has been certified organic since 2005, with no herbicides, pesticides, or synthetic fertilizers; the estate relies on copper and sulfur treatments, mechanical weeding, and manual vineyard work. Grapes are hand-harvested and transported the same day, with winemaking focused on preserving freshness and genuineness through controlled fermentations, careful wood use, and bottle refinement. The winery combines traditional practices, environmental sustainability, and respect for the historic terraced landscape.
