Domaine Guillemot-Michel

France

Domaine Guillemot-Michel is a family estate in Quintaine, in the heart of Viré-Clessé in Burgundy’s Mâconnais. Founded in 1982 by Pierrette Michel and Marc Guillemot, it has been gradually handed to the next generation since 2012, with daughter Sophie Guillemot-Michel and her husband Gautier now managing the domaine while the founders remain involved. The estate farms old Chardonnay vines on limestone and clay soils and has worked organically and biodynamically for decades, with DEMETER certification from 1992 to 2017 and BIODYVIN since 2018. Vineyard work emphasizes living soils, biodiversity, and plant-based treatments. In the cellar, intervention is minimal: hand harvesting, gentle pressing, natural fermentations in concrete with indigenous yeasts and bacteria, and élevage on lees until bottling. Sophie also revived the Burgundian tradition of distilling and aging eaux-de-vie using historic wood-fired stills.
