Syrahmi is a boutique Heathcote producer focused on Rhône varieties and expressing the region’s vineyard character through small-batch, low-intervention winemaking. Founded and led by Adam Foster, a former chef, the winery works with several Heathcote sites, including the organically certified, biodynamically farmed Carl Brown vineyard and the high-density Greenstone block. Farming emphasizes natural water retention and minimal intervention. Foster selects single-vineyard, single-clone fruit for some wines, while blends draw from multiple sites. His hands-off approach includes whole-bunch fermentation, no pumping or plunging, and gentle extraction, producing elegant, savoury wines from Shiraz, Grenache and Mourvèdre.
