Family-owned Domaine Dancer in Jura is led by Theo Dancer, following his father Vincent Dancer. The estate produces a very limited amount of Savagnin from the Etoile vineyard, a premier Jura terroir. Farming is healthy and sustainable, with a hands-off approach and movement toward organic certification, though the domaine is not yet fully certified. Winemaking is minimal-intervention: native yeasts, natural malolactic fermentation, and no enzymes, acids, additives, bâtonnage, fining, or filtration. The result reflects a small, family-run domaine focused on expressing its vineyard with as little intervention as possible.
