Paulett Wines is a family-owned Clare Valley producer, founded in 1983 by Neil and Alison Paulett and now run by their son Matt and his wife Ali. Based in Polish Hill River, the winery works with estate-grown fruit and produces wines in small batches, prioritising quality over yield. Its dry-grown Polish Hill River vines, rooted in ancient slate and mineral-rich soils, are particularly associated with Rieslings showing distinctive flinty minerality, clarity and finesse. The broader Clare Valley range emphasises vibrant fruit and approachable elegance, while the traditional-method Trillians sparkling wines express balance and regional character. Paulett also highlights sustainable practices, including no irrigation since the 1990s, and maintains historic 100-year-old Shiraz vines. The estate includes a cellar door and Bush deVine restaurant, offering wine and food experiences centred on local and native ingredients.
