Founded in 1980 by friends Giambattista Cilia, Giusto Occhipinti and Cirino Strano, COS remains owned and run by its founders in southeastern Sicily, around Vittoria. The estate farms biodynamically and organically, avoiding synthetic fertilizers, pesticides and fungicides, and is widely noted as a Sicilian pioneer of biodynamic viticulture. In the cellar, COS is known for low-intervention winemaking and for reviving the use of terracotta amphorae, especially in its Pithos wines, to preserve purity and site expression without added aromas from wood. COS also played an important role in the revival of Cerasuolo di Vittoria, later recognized as Sicily’s only DOCG, and follows holistic sustainability practices including wastewater phytodepuration and composting.
