Family-owned Tony Bish Wines was founded by Tony and Karryn Bish in 2013 and is based at an urban winery in Napier’s historic National Tobacco Company Building. Focused entirely on Hawke’s Bay Chardonnay, the producer makes small-batch, limited-release wines from partner vineyards including Skeetfield, Two Terraces and Kokako Farms. These vineyards are certified under Sustainable Winegrowing New Zealand, with regenerative practices centred on soil health, wildflowers and companion planting. Tony and Oscar Bish lead the winemaking, combining artistic and technical approaches with hand-picking, gentle whole-bunch pressing, natural fermentation and no additives. Vessel selection is central to the style: the cellar includes French oak and concrete egg fermenters, oak cuves and barrels. Tony Bish Wines is particularly associated with textured, finely balanced Chardonnay and innovative egg-shaped fermentation.
